Ingredients (for 2 glasses):

250 ml cassis mother juice

3 tbsp sugar

5 sprigs of rosemary

300 ml sparkling wine (chilled)

Preparation:

1. Bring the cassis mother juice and sugar to the boil in a small saucepan, stirring until the sugar has completely dissolved.
2. Add the rosemary sprigs and simmer over a low heat for 15 minutes. Let the syrup cool down briefly, pour it into ice cube molds and freeze overnight. Depending on the size of the mold, the amount is enough for about 12 syrup ice cubes.
3. Fill two wine glasses with 150 ml of sparkling wine each, carefully add 1-2 syrup ice cubes to the glass with a spoon, decorate with 1 sprig of rosemary each and serve immediately.
